Cake
- 4 eggs beaten
- 3/4 cup vegetable oil
- 1/2 cup applesauce
- 1 cup sugar
- 1 cups brown sugar
- 1 Tbsp. vanilla
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. cinnamon
- 1/2 tsp. nutmeg
- 3 cups carrots grated
Frosting
- 1/4 cup butter softened
- 8 oz. cream cheese softened
- 1 tsp. vanilla
- 2 cups powdered sugar
Carrot Cake
Add the eggs to a large bowl and beat them.
Add the vegetable oil, applesauce, sugar, brown sugar, vanilla, flour, baking soda, baking powder, salt, and the spices to a large bowl. Mix together.
Add the carrots and fold into the mixture.
Pour into the casserole dish and bake for 40 minutes or until a cake tester comes out clean.
Cool for approximately 20 minutes.
Frosting
Add the softened cream cheese and butter to a medium-sized bowl. Mix together.
Add the vanilla and powdered sugar and mix together.
Spread over the cake.
