Chicken Tater Tot Casserole

Whip up this delicious 6-ingredient tater tot casserole with chicken for a delicious and easy dinner! The recipe is perfect for busy nights when you don't want to spend much time in the kitchen. Ingredients

  • 4 skinless boneless chicken breasts cooked and shredded
  • 1 tablespoon minced onion
  • 1 cup sour cream
  • 10.5 ounce can cream of condensed chicken soup
  • 10.5 ounce can cream of condensed cheddar cheese soup
  • 1-1/2 cups shredded cheddar cheese
  • 28 ounce bag frozen tater tots
  • Optional: pinch of salt and pepper

Instructions

  • Preheat the oven to 350 degrees and grease a 9x13-inch baking dish with butter or nonstick cooking spray.
  • Add the cooked shredded chicken to a large bowl.
  • Next, add the minced onion, soups, sour cream, salt, and pepper, and 3/4 cup of shredded cheese.
  • Spread the chicken mixture in a greased 9x13-inch baking dish and top with the remainder of the cheese.
  • Place the tater tots on top and bake for 60-70 minutes or until the tater tots are golden brown.
  • To get crispy tater tots, broil for five minutes at the end. (Be sure to stay close by, as they will burn fast under the broiler.)

I cooked the chicken breasts and shredded them ahead of time. You can also use rotisserie chicken for the recipe.
