Ingredients

  • Store-bought graham cracker crust-I used a 10-inch/9-ounce crust.
  • 14 ounces of sweetened condensed milk
  • 8 ounces of softened cream cheese
  • 1 cup of shredded sweet coconut
  • 20 ounce can of crushed pineapple drained
  • 6 ounces of sliced maraschino cherries
  • 3 Tablespoons of lemon juice
  • 3/4 cup chopped pecans
  • 8 ounce container of Cool Whip
  • Additional Cool Whip for topping, if desired

Instructions

  • Add the sweetened condensed milk and cream cheese to a large bowl and mix with an electric mixer.
  • Next, add the shredded coconut, crushed pineapple, cherries, lemon juice, and pecans and mix.
  • Add the Cool Whip and fold in.
  • Pour the pie into the pie crust and refrigerate for at least two hours.

Notes

The crushed pineapple equals about one cup after draining the juice.
