Gluten-free peanut butter cookies are easy to make and delicious.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup sugar + 1 tsp
  • 1 egg

Instructions
 

  • Preheat oven to 325-degrees.
  • Place all of the ingredients into a medium-sized bowl, and mix together.
  • Shape the dough into 1" to 1-1/2" balls and place onto a cookie sheet, approximately 2" apart.
  • Spray a fork with non-stick spray, and flatten each ball with a criss-cross pattern.
  • Bake for 15-20 minutes until the edges are golden brown.
  • Sprinkle 1 tsp. of sugar on top of the cookies.
  • Allow to cool.
