Ingredients

  • 1 cup of softened butter
  • 1 cup of sugar
  • 1 egg
  • 2 teaspoons of vanilla extract
  • 2 1/2 cups of all-purpose flour
  • 1 teaspoon of salt
  • Green food coloring
  • Red candy hearts
  • Grinch cookie cutter

Instructions

  • Preheat your oven to 350 degrees (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour and salt. Set this dry mixture aside.
  • In a separate bowl, beat the softened butter and granulated sugar together until they're light and fluffy. This should take about 2-3 minutes.
  • Beat in the egg and pure vanilla extract until they're fully incorporated into the butter-sugar mixture.
  • Add a few drops of green food coloring to achieve the Grinch's signature color. Start with a small amount and add more until you reach the desired shade of green. Mix until the color is evenly distributed throughout the dough.
  • Gradually add the dry ingredient mixture to the wet mixture, mixing until a soft dough forms. (You might need to add a few more drops of green if it lightened up).
  • On a lightly floured surface, roll out the green dough to about 1/4-inch thickness.
  • Use a Grinch-themed cookie cutter to create your desired shapes.
  • Arrange the cookies on the prepared baking sheet and bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on a wire rack. They'll continue to firm up as they cool.
  • Add a red candy heart on the end of the Grinch hat. Enjoy!

Notes

  • Ensure that the cookies are completely cool before storing them.
  • Place the cookies in an airtight container, separating layers with parchment paper or wax paper.
  • Store at room temperature for up to one week. For longer storage, you can freeze the baked cookies in a freezer bag for up to three months. Just make sure to thaw them at room temperature before serving.
