- 1 cup of softened butter
- 1 cup of sugar
- 1 egg
- 2 teaspoons of vanilla extract
- 2 1/2 cups of all-purpose flour
- 1 teaspoon of salt
- Green food coloring
- Red candy hearts
- Grinch cookie cutter
Preheat your oven to 350 degrees (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the all-purpose flour and salt. Set this dry mixture aside.
In a separate bowl, beat the softened butter and granulated sugar together until they're light and fluffy. This should take about 2-3 minutes.
Beat in the egg and pure vanilla extract until they're fully incorporated into the butter-sugar mixture.
Add a few drops of green food coloring to achieve the Grinch's signature color. Start with a small amount and add more until you reach the desired shade of green. Mix until the color is evenly distributed throughout the dough.
Gradually add the dry ingredient mixture to the wet mixture, mixing until a soft dough forms. (You might need to add a few more drops of green if it lightened up).
On a lightly floured surface, roll out the green dough to about 1/4-inch thickness.
Use a Grinch-themed cookie cutter to create your desired shapes.
Arrange the cookies on the prepared baking sheet and bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
Remove the cookies from the oven and let them cool on a wire rack. They'll continue to firm up as they cool.
Add a red candy heart on the end of the Grinch hat. Enjoy!
- Ensure that the cookies are completely cool before storing them.
- Place the cookies in an airtight container, separating layers with parchment paper or wax paper.
- Store at room temperature for up to one week. For longer storage, you can freeze the baked cookies in a freezer bag for up to three months. Just make sure to thaw them at room temperature before serving.
