One Pot Ground Beef Stroganoff Casserole

- 6 tablespoons butter divided
- ¾ cup diced onions I used sweet onions, but you can use red onions.
- 1 cup sliced mushrooms if you prefer smaller bites you can dice them as well.
- 2 cloves garlic minced
- 1 pound ground beef
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon ground pepper
- 3 tablespoons all-purpose flour
- 2 ½ cups beef broth
- ¾ cup sour cream room temperature
- 1 tablespoon Dijon mustard
- 8 ounces egg noodles cooked (or pre-cooked frozen noodles).
- 1 cup crushed croutons you can also use breadcrumbs
- 1 tablespoon Parsley optional
If the noodles are not cooked, cook according to directions. Drain. Set aside. (I like to add one tablespoon of butter or oil and mix so the noodles don’t stick together). Or, use precooked noodles.
Preheat the oven to 350 degrees.
In a large, oven-safe skillet, over medium heat, melt three tablespoons of butter. Add the onions, mushrooms, and minced garlic. Cook and stir a few times until onions are translucent and the mushrooms are softened.
Add the ground beef and break it into small pieces. Sprinkle the garlic powder, paprika, salt, and pepper over the beef. Mix and cook until the meat is no longer pink.
Sprinkle the flour over the cooked meat. Mix and cook over medium heat for 1-2 minutes.
Pour in the beef broth and mix well.
Add the sour cream and Dijon mustard. Mix so all ingredients are combined and you have a sauce.
Bring to a boil. The sauce will start to thicken as it cooks.
Add the cooked noodles. Mix to coat the noodles. Turn the heat off.
Spread the noodles evenly.
Cover with the crushed croutons evenly on top of the pasta.
Pour three tablespoons of butter over the crouton crumbs.
Bake in the preheated oven for 20-22 minutes or until the top is golden brown.

To save time, you can buy pre-cooked frozen egg noodles to add to the dish.
You can also use breadcrumbs instead of croutons. Panko breadcrumbs always give more of a crunch, like crushed croutons.
